Oct 17, 2008 · The frozen cake doesn't "freeze" the icing hard for me. I never refrigerate my cakes because I prefer the icing to air dry. Cakes only take a few minutes to a couple of hours to thaw, depending on size.

Now the reasoning I got for this is as follows: If you ice a frozen cake with buttercream, the icing will get very cold-almost freezing. Then as the cake thaws out so does the frosting.

Aug 2, 2007 · I usually tort prior to freezing so I can just take out of the freezer, fill and frost. The only time I've had a problem with frosting a frozen cake is when it's hot/humid. Like tiptop57 said - the sweating can cause problems. I almost freeze my cakes and people that swear they don't like frozen cakes love mine! ) Debbie

Oct 6, 2006 · I have frozen a cake already covered in fondant and it did fine on thawing, BUT i have also frozen a cake that just had a crumb coat of buttercream as it was a sculpted cake, took it out of the freezer and covered it in fondant while it was still frozen. fondant went on fine.

Aug 23, 2009 · When THAWING your frozen cake, I read that some people leave "wrapping" on when defrosting others take ALL wrapping off and defrost on the counter. How do you do it? When you say leave "wrapping" on the cake when defrosting, are you talking about the foil AND saran wrap. Or, just the saran wrap? I have been leaving ALL wrapping on, including foil.

Aug 10, 2009 · I have frozen cakes, decorated them and then frozen them again. I have not found it to negatively affect the taste of the cake. If anything, the cake seems to be more moist. If this is a "paying" job, then double-check food regulations. If not, then stop stressing - it should be fine! (Especially since it is not decorated yet).
