San Pedro’s artisan bakery and café Colossus is getting even bigger with a third location opening with a more robust menu.
For the bakery’s first decade, Vatinet and his wife and business partner Missy stuck to bread. In 2009, they made their first foray into sandwiches, offering menu items like the Croque Madame.
“When you look at the menu, everything is in service to the bread in one way or another,” said Alex Baldinger, the bakery’s director of operations and a cousin of owner Steve Baldinger.
